Jenny’s Black Bean and Corn Salad

Jenny’s Black Bean and Corn Salad
In large serving bowl, combine…..
3 ears grilled sweet corn, cut off the cob
1 pint grape tomatoes
1 avocado chopped
1 cup black beans, drained
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
the juice of one lime
2 teaspoons olive oil
Toss until well coated then top with…..
3 ounces blue cheese, crumbled
2 Tablespoons fresh basil leaves, chopped
Cover and store up to 2 – 3 days in the refrigerator.
Jenny likes to serve this plain with tortilla chips.  She also likes to serve it heated or chilled over a block of cream cheese.
