Grandma’s Canned Tomato Soup

If you are still trying to use up the last hurrah of tomatoes in your garden you might enjoy Grandma’s Canned Tomato Soup. Now – for the diehard grocery store tomato soup fans, well this has a very different flavor and feel as this includes celery and onion. This is a great soup to serve in the dead of winter with grilled cheese. This is one for the grown ups in the house so jazz that grilled cheese up by using a chewy Ciabatta or hearty Farmhouse white bread with a Gruyere, Cheddar, Fontina, Havarti or a mixture of those cheeses in the middle. To serve the soup I like to make mine creamy by stirring in a little half and half or milk, whatever I have on hand. Jenny and I got together to put up several jars of Grandma’s Canned Tomato Soup so we could share some photos of this classic along with the recipe. We hope you enjoy!

Grandma’s Canned Tomato Soup

Peel, core and chop…..
8 quarts tomatoes
Place in stockpot.  Then combine in food processor…..
6 medium onions, diced
1 bunch of celery, diced
Add to stockpot with tomatoes.  Cook on medium heat.

1 cup sugar
1/4 cup salt
1 cup unsalted butter
1 cup of flour
Once pulp has come to a slow boil, CAREFULLY puree using a handheld immersion blender.

100_0742 copy100_0744 copyStir paste in boiling pulp and cook until it thickens slightly.
Pour in pint size jars and water bath seal in boiling water for 35 to 40 minutes.
