Sun-Dried Tomato Cheese Dip

This is a great recipe I found on the AE Dairy website.  To easily grate the cheese I used my Cuisipro Cheese Grater (Rape a Fromage) which is a small hand held crank grater similar to what you see used in restaurants to put fresh Parmesan on salads or pasta. 

• 3 T. sun-dried tomatoes, chopped (do not use oil-packed)
• 1 c. water
• 1 3 oz. package cream cheese, softened
• 1/2 c. finely shredded Asiago cheese
• 3/4 c. AE Garlic Dip
• 1/4 c. finely sliced green onion

The key ingredient: AE Garlic Dip

Soak tomatoes in water for 30 minutes. Drain thoroughly.
Mix ingredients in a microwave-safe bowl. Microwave on medium (50%) for 3 minutes. Stir every minute.
Keep warm in a fondue pot and serve with pita crisps, french bread slices and assorted fresh veggies.
