Select fresh tomatoes from the garden. Wash and dip in slow boiling water for a minute until skins start to crack.
Remove tomato from water and rinse under cool water from faucet.
Remove skins. They should slip off easily. Cut in half, core, remove seeds and most of juices then roughly chop and set aside.
Do this with remaining tomatoes until you have 3 cups.
Put 3 Tbls butter in skillet with tomatoes and let those slowly cook down on medium heat until softened.
Sprinkle 4 Tbls flour over top of tomatoes and stir in until completely absorbed. About 1-2 minutes.
Add 2 cups milk and stir constantly until thickened.
Serve over biscuits.
This is a great dish to serve alongside the traditional sausage gravy and biscuits. You can even add other vegetables if you like. As well if you do not have fresh tomatoes you can use a 28 oz can of your favorite chopped tomato.
