Stuffed Green Peppers

stuffedgreenpeppersHere is another great recipe from Mike who shared his competition winning Beer Cheese Soup recipe with us awhile back.  This is another family favorite that he prepares for his wife and boys.

Being careful to not cut the opening too large, wash then stem, core and remove seeds from…..
6 large green peppers
…..and set aside.  In mixing bowl thoroughly combine…..
1 pound ground pork sausage
1/4 cup grated Romano cheese
2 cups Italian seasoned bread crumbs
2 eggs
1/2 teaspoon dried sweet basil
salt, pepper and garlic salt to taste
If mixture seems to be too dry add a small amount of milk as you want this to be a thick but smooth consistency.  Gently fill the peppers to the top with this mixture but do not pack down.  Place in electric skillet and set heat to low and top with…..
2 jars spaghetti sauce
Cooking for 1 hour on medium low, handle with care and turn frequently so they will cook through evenly and on all sides.    To serve, cut each pepper in half, top with sauce from skillet and garnish with additional grated Romano cheese.  Serve alongside garlic mashed potatoes and garden salad topped with your favorite salad dressing.
