Grandma’s Red Cake

This classic Red Cake is perfect to serve for dessert on Valentine’s Day.  This is the recipe Grandma would use to make Red Cake.  We want to mention this references Waldorf Astoria Deluxe Red Cake.  Always a sight to see this sitting on the dining room table when you would stop by around Valentine’s Day.  And, there are lots of places you can go to get a commercially prepared Red Velvet Cake.  Most are a dark red cake with cream cheese frosting.  So for the makers and tasters of this recipe please note that this is different from what you would buy in a store as this is made with a FILLING….. Not a Frosting.  We hope you enjoy this one.

redcakePreheat oven to 350 degrees.  Grease and flour 2 – 9 inch round cake pans and set aside.  Using stand mixer cream together…..
1/2 cup unsalted sweet cream butter
1 1/2 cup sugar
Be prepared to add eggs one at a time and mixing just until each is combined, add…..
2 eggs
In small bowl mix…..
2 ounces red food coloring
2 teaspoons cocoa
…..and add to creamed mixture.  Alternately in small amounts add…..
1 teaspoon pure vanilla extract
1 teaspoon salt
1 cup buttermilk
2 1/4 cups cake flour
In small bowl combine…..
1 teaspoon soda
1 teaspoon vinegar
.….and add to mixture.  Combine then divide batter evenly between the 2 – 9 inch greased and floured cake pans you set aside earlier.  Bake in oven for 30 minutes or until toothpick inserted in the center of the cake comes out clean.  While cake is baking in small saucepan add…..
1 cup milk
3 Tablespoons flour
Cook over medium high heat while whisking and just until thickened.  Set this aside to cool completely.  Cool cake completely when done baking.  Once everything has cooled, in mixing bowl cream together…..
1 cup sugar
1 teaspoon pure vanilla extract
1 cup salted sweet cream butter
Once creamed together add in the cooled milk/flour mixture, stirring until combined.  Split each cake layer in half to make four layers.  As you split the layers, trim off a bit extra cake, crumble it and reserve it in a small bowl to decorate the top of the cake as shown in the photo.  Fill between layers and frost the top of the cake with filling mixture.  Decorate with the crumbled cake.
