Kristina’s Honey Butter

kristinashoneybutter1Years ago I went to this really great upscale BBQ restaurant that served cornbread topped with honey butter.  So Good.  Then a few years ago I was working with the food and beverage crew at a venue where I was going to be hosting an event for a client.  As we were reviewing the possibilities for the dinner menu they mentioned they top their rolls with a few different toppings.  One of the toppings was honey butter.  A lot of times when I am planning menus for an event I get to have a tasting.  Those rolls, just like the cornbread at that restaurant, were also So Good.  And yes, we put them on the menu for the event.

If I can’t get a restaurant, chef or caterer to share a recipe with me that always leads me on the hunt for one so I can serve the same kind of thing at home.  Honey Butter really does take homemade cornbread such as Greg’s Cast Iron Cornbread to a whole new level.  And – it turns our favorite Grandma’s Homemade Delicate Dinner Rolls into a fashionable food for today.  Grandma always topped them with butter – but it is fun to make them as Honey Buns once in a while – especially at Easter when serving them alongside your Easter ham.

Ok, now something to know – this calls for creamed honey, not the clear golden honey in the teddy bear container.  You may also find creamed honey packaged as whipped, spun or churned honey but essentially it looks creamy, is spreadable, is oftentimes sold in a tub and you will still find it close by the regular honey.  Ok – on to Honey Butter…..

kristinashoneybutter2In small saucepan over medium heat melt…..
1/2 cup salted sweet cream butter
Once melted stir in…..
1/2 cup creamed honey
1/4 cup sugar
1/4 cup heavy whipping cream
Turn heat to medium high and continue to stir but do not boil just bring to a boil – you will actually Hear it start to boil before you See it start to boil and when you hear it is the time to immediately remove from heat then stir in…..
1/4 teaspoon pure vanilla extract
Cool.  Again – enjoy this brushed on tops of Grandma’s Homemade Delicate Dinner Rolls or on Greg’s Cast Iron Cornbread and we dare you to Not say…… So Good.
