Greg’s Cast Iron Cornbread

gregscastironcornbreadHere is another great recipe from Greg and Kristi with Naughty Nurses BBQ.  This is so easy as you Make It and Bake It all in the same pan.  Greg uses a nylon whisk so that he goes easy on this finish of his favorite cast iron skillet.  This is the perfect compliment to chili or the classic Midwest ham and bean soup.

Greg’s Cast Iron Cornbread

1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 teaspoon salt

Directions:
Preheat oven to 375°  Melt butter in a 10″ cast iron skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until blended and a few lumps remain.  Bake in preheated oven for 25 minutes or until a toothpick inserted into the center comes out clean.

From Kristina – of course you can brush the top of this with melted butter before serving or brush it with our Honey Butter recipe.  So Good!
