Kristina’s Spinach Dip

spinachdip copyWhile on the run between client meetings I found a restaurant along one of my regular routes that served up a great appetizer of spinach dip with breadsticks.  So whenever I was on that route I would stop in and just grab a seat by myself in the bar area, order up this dip with a glass of white wine and enjoy a quiet lunch.  That restaurant has since closed down.  This recipe is the closest I could get to that lunchtime favorite.  This is great too for a crowd.  Can also be put in crockpot instead of baking in the oven.  Perfect for fresh spinach right out of the garden.

Kristina’s Spinach Dip
Preheat oven to 350 degrees.  In microwave and oven safe baking dish place…..
6 ounce fresh spinach
1 Tablespoon salted butter
Microwave on high in 1 minute increments stirring in between for total of 3 minutes and until wilted.  To baking dish add…..
8 ounce cream cheese
1/4 cup real mayonnaise (not Miracle Whip – and as we shared in our fish taco recipe we prefer Mrs. Clark’s)
1/4 cup grated Parmesan cheese
1/4 cup grated romano cheese
1 clove minced garlic
1/2 teaspoon dried basil
1/4 cup grated mozzarella cheese
1/4 teaspoon garlic salt
salt and pepper to taste
Stir to combine and until creamy.  Lightly sprinkle…..
Parmesan cheese
over the top of mixture until evenly covered.  Bake at 350 degrees for 25-30 minutes or until top is lightly browned.  Serve with breadsticks.
