Ham and Cheese Quiche

hamandcheesequiche copyThere is a restaurant in West Des Moines, IA where I like to take clients that features a daily quiche lunch special.  They pair it with soup or salad.   It is called Club Car and is a locally owned restaurant (the best kind!).  After enjoying quiche there I set out to find a recipe that would be easy to make at home.  Actually any quiche recipe would be pretty easy but this is the one I tried first and still make every once in a while.  This is great for a fast breakfast on a busy day – or for a brunch (think Mother’s Day or Father’s Day).  We hope you will give this a try!

1 pound petite diced ham
1 8 ounce package shredded Cheddar and Monterrey Jack cheese blend

6 large eggs
3/4 cup half and half
1/2 teaspoon ground pepper
Whisk until combined then pour over the the meat and cheese mixture.  Bake 40 minutes until center is just set.  Cut into wedges and serve.
