Some call this a Poor Man’s Pie as I guess once upon a time this is what you would make if you didn’t have the cash to buy pecans for pecan pie. THIS is Oatmeal Pie. While on the run for work I used to stop in at a restaurant once in a while that served this pie. After they closed down – this was the closest I could get to that restaurant’s pie. This is a family favorite at our house. Serve it up with cinnamon ice cream.

1 stick sweet cream salted butter
1 cup sugar
1 cup dark brown sugar
½ teaspoon cinnamon
1 teaspoon pure vanilla extract
Stir until combined then add…..
1 cup quick oats
1 cup old fashioned oats
Stir until combined. Pour into pie pan. Bake in oven for 50 minutes.
