Kristina…I make this Beer Cheese Soup recipe every year during the holidays for my family. This Beer Cheese Soup won a chili/soup cook-off and was also included in a cookbook that our company published. I hope you like it.
When we received this recipe I could not wait to try it. I made it for my family and served it alongside mini hot club sandwiches. We found this to be a great tasting soup. It was quick and easy to prepare.
This is a great soup to enjoy while watching football on Sunday afternoons. And, for those who like to imbibe while making dinner well, this recipe leaves a bit of beer in the bottle for you to enjoy as the soup simmers!
Beer Cheese Soup
In large soup pot set to medium low heat melt…..
1/2 cup salted butter
once melted add…..
1 cup all-purpose flour
whisk until combined. Continue cooking and stirring constantly over medium heat for 5 minutes. Then add…..
4 cups chicken broth
1 1/2 cups Half and Half
and continue cooking and whisking constantly until smooth and thick. Do not boil. Then add…..
16 ounce jar Cheese Whiz
and continue whisking until cheese is melted and mixture is smooth. Then add…..
6 ounces of beer
1 Tablespoon Worcestershire sauce
1/4 cup chopped fresh chives
Simmer for 15 minutes, whisking constantly. Again, do not boil.
For the sandwiches in the photo I simply took mini Ciabatta buns, placed the bread open face on a baking sheet and topped with smoked honey ham, smoked turkey, Havarti cheese, bacon then placed under the broiler until hot and toasty. When I removed the pan from the oven I added a bit of Mayonnaise and sprinkled with a bit of Italian seasoning before serving.
