This recipe is from the Anderson Erickson Dairy website. I made this for my family a couple weeks ago and they really enjoyed it! We used a dried fruit blend that included raspberries, blueberries and cherries. We also included the walnuts. With the protein, fiber, fruit and nuts – this is healthy! 2 c. quick-cooking oats
¾ c. packed brown sugar
1 tsp. baking powder
1 tsp. ground cinnamon
½ tsp. ground nutmeg
½ tsp. salt
1 c. AE Milk (whole, 2%, 1%, or fat-free)
1/3 c. melted butter
1 t. vanilla extract
1 c. mixed dried fruit bits or raisins
½ c. chopped walnuts
Preheat oven to 350°F; lightly coat a 9-inch round cake pan or quiche pan with nonstick spray. Stir together the oats, brown sugar, baking powder, cinnamon, nutmeg, and salt in a large bowl. In another bowl, whisk together the eggs, milk, melted butter, and vanilla. Pour over the oat mixture, add the dried fruit and walnuts, and stir until well blended. Transfer the mixture to the prepared pan and bake for 30 to 35 minutes, or until set. Let stand 5 minutes before cutting into wedges and serving. Pour additional milk over the oatmeal if desired.
