Suzanne’s Sugar Cookies

Suzanne and I got the kids together and made these sugar cookies for Valentine’s Day.  This recipe made 84 small cookies.  She took half of them and shared them with family.  I kept the other half and sent them with my son to share with a group of his friends.  This is a great sugar cookie recipe to make even at Christmas time.

Preheat oven to 350 degrees.  Using stand mixer combine in mixing bowl……
1 cup salted sweet cream butter
1 cup sugar
1 cup powdered sugar
Cream until light and fluffy then add…….
2 eggs
1 cup vegetable oil
2 teaspoons pure vanilla extract
Mix on low until thoroughly combined then add…….
1 teaspoon cream of tarter
1 teaspoon soda
5 1/2 cups all purpose flour
Mix until thoroughly combined.

Flatten to 1/4 inch thick

Using small cookie scoop, drop each ball of dough into bowl that has been filled with…..
1/2 cup sugar 
Coat each ball and place on baking sheet 2 inches apart.  Press each with flat bottom glass until about 1/4 inch thick.  Bake for 10 minutes until dry and just set.  Remove from pan to cooling rack.

As cookies cool completely combine in mixing bowl…..
3 ounces cream cheese
6 Tablespoons salted sweet cream butter
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
2 cups powdered sugar
Food coloring of choice (optional)

Frost each cookie.

Mix with hand mixer until smooth and creamy.  Frost cookies.
