In the summer I eat Caprese Salads for lunch with fresh tomatoes and basil from the garden but this variation of the classic salad makes a great fast, easy, elegant appetizer.
Package of Spinach or Cheese stuffed Tortellini
Package of grape tomatoes
Package of Mini mozzarella balls
Jar of prepared Basil Pesto
Prepare pasta according to package directions then drain and rinse in cold water. Thread tortellini, tomatoes and mozzarella balls in quantity and pattern desired onto skewers. Brush with prepared Basil Pesto. Season with salt to taste.
