Last year I tried a Salted Nut Roll recipe I found in a top cooking magazine only to be disappointed. It was complicated and was not that good. A friend recently gave me this recipe. My friend had not tried this recipe so my sister Suzanne and I thought we would give it a try. We put my nephew Lance to work at overseeing the melting. Men and kids gave this easy recipe a thumbs up. One cooking note though – once the melted mixture is ready to pour it does stiffen up quickly so – pour fast and spread it out fast!
1 can sweetened condensed milk
1 (10-12 ounce package peanut butter baking chips
2 Tablespoons unsalted butter
1 1/2 (16 ounce) jars lightly salted dry roasted peanuts
Set peanuts aside and melt the other ingredients in saucepan over low heat. Spread 1 jar peanuts in bottom of 9×13 in pan. Pour melted mixture over peanuts. Sprinkle remaining peanuts over the top of the mixture and press lightly to set. Cool completely before cutting.
