Orange Slices Candy Cookies

If you made Grandma’s Cranberry Orange Jam you might be wondering what to do with the rest of the candied orange slices (orange slices candy).  Well here is a unique cookie recipe that will use up the rest of the container.

1 c unsalted butter
1 c light brown sugar
1 c white sugar, plus 1 Tablespoon
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 c all purpose flour
2 c quick cooking oatmeal
1 c coconut
1 c orange slices candy
Preheat oven to 350 degrees.  Cut orange slices candy into small pieces and coat with the 1 Tablespoon of sugar to keep from sticking.  Combine baking soda, baking powder, salt, flour and set aside.  Cream butter and sugars.  Add eggs and vanilla.  Beat until combined.  Add combined dry ingredients, mixing until combined.  Add oatmeal and coconut, mixing until combined.  Stir in orange slices candy.  Drop by teaspoonful and bake for 10 minutes or until lightly browned.
